Why is packing a simple, healthy, and delicious lunch such a challenge? Everyone always seems to turn to the old PB&J, ham and cheese, or maybe some crackers and cheese. Don’t get me wrong I love a good peanut butter and jelly sandwich, but I can’t eat it every day! This month’s Recipe Redux challenge is Limpin’ Along for Lunch. We are sharing our favorite healthy lunch recipes so you and your family don’t get stuck in a lunch rut.
When I was completing my dietetic internship, I was living in the sorority house. I loved living there, but I didn’t have a kitchen and I shared a fridge with 38 girls. Space was limited to say the least so I had to get creative. As a dietitian, I am always thinking about how I can get as many possible food groups rolled into one. The biggest bang for my buck you could say. These hummus pinwheels are just that! They are a great source of protein, veggies, and whole grain. Add some cheese and they’ll even have dairy!
The best part about these delicious little pinwheels is that you can make them the night before and keep them in the fridge. Let’s face it, no one has time to pack a lunch in the morning. I like my snooze button too much. Make these Hummus Pinwheels for lunch tomorrow!

Hummus Pinwheels
Ingredients
- 1 Whole wheat tortilla
- 2 Tbsp Hummus use any kind you like
- 1/4 tsp Paprika
- 2 Tbsp Shredded chicken or deli meat
- 3 Mini bell peppers
- A handful of Spinach
Instructions
- Place the whole wheat tortilla on a cutting board
- Spread hummus all over the surface of the tortilla and sprinkle with paprika
- Add the shredded chicken or your meat of choice to the center of the tortilla (if using deli meat use about 3-4 slices)
- Dice the mini bell pepper and add it and the spinach to the center of the tortilla
- Pick up one side of the tortilla and roll in. Make sure the roll is tight, if not your pinwheels will come apart
- To secure the edge of the tortilla, add some hummus to the edge. This should help it stick together
- With a sharp knife, cut the roll into 8 slices
- Store pinwheels in the fridge in an air tight container
Oh wow, sharing a fridge with 38 other girls! That would have been a nightmare! I like the idea of these pinwheels though – I would leave the meat out to make these vegan, or maybe add some chickpeas, quinoa, sunflower seeds…so many possibilities, actually! Thank you for the lunch inspiration <3
