Spoiler Alert: This was a total recipe fail, but that’s what makes recipe development fun- right!? These cute little cups were supposed to be one giant Instant Pot pancake. As you can see, that is not how it turned out.
Have you ever made a cake and tried to dump it out when it’s still warm? Yup… that’s what happened here. That and I ran out of cooking spray. So what do you do with crumbled cake? Make a trifle. What do you do with crumbled pancakes (that taste delicious by the way)? Make pretty pancake cups.
This month’s recipe redux post challenged us to show off our favorite kitchen gadget. Mine of course is the Instant Pot. From chicken teriyaki and chili to chocolate cobbler and baked potatoes this thing does it all. It can even make pancakes… well in my case, pancake cups. Even though this recipe didn’t turn out the way I intended it to, it still tasted delicious and was worth sharing.

Instant Pot Blueberry Pancake Cups
Ingredients
- 1 c. white whole wheat flour
- 1 c. almond flour
- 2 tbsp. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1 tsp cinnamon
- 1 1/2 c. milk or milk alternative
- 2 large eggs
- 1 cup frozen blueberries
- nonstick cooking spray
- Fresh blueberries and maple syrup for toppings
Instructions
- In a large bowl, combine dry ingredients. Add the milk and eggs and mix ingredients together until smooth.
- Using nonstick cooking spray, grease the bottom and sides of your instant pot. Don't skimp on this step if you want the pancake to come out like an actual pancake 😉
- Seal lid and set to low pressure. Cook for 45 minutes, or until the cake is springy to the touch and not at all wet.
- Let the pancake set for 10 minutes or more. Use a spatula to remove pancake from pot. Serve with butter and maple syrup.
