My vegetarian Mexican pizza is the perfect throw together appetizer, lunch, or dinner. Made with just 7 simple ingredients, this zesty twist on the Italian classic will be a new family favorite.

Ingredients

  • 1 whole wheat tortilla
  • 2 tbsp sabra jalapeno hummus
  • 2 tbsp black beans
  • 2 tbsp corn
  • 5 cherry tomatoes quartered
  • 2 tbsp Mexican cheese
  • 2 slices of avocado

Instructions

  • Preheat oven to 375 degrees. Place tortilla on a baking sheet and bake for 5 minutes until golden and firm.
  • Top with hummus, beans, corn, tomatoes, cheese, and avocado.
  • Slice and enjoy!
