Tropical Shrimp Lettuce Wraps with Tropicana® Fresh Pineapple Salsa

Ingredients

  • • 1 lb. 21-25 ct shrimp, peeled and deveined
  • • 1 tsp paprika
  • • 1tsp garlic powder
  • • salt and pepper
  • • 1 tsp extra virgin olive oil
  • • 7-8 pieces of bibb lettuce
  • Tropicana® Fresh Pineapple Salsa
  • • 1 cup diced Tropicana® Fresh pineapple
  • • 1 cup diced sweet peppers
  • • 1 cup diced Roma tomatoes
  • • 1 cup cilantro
  • • 1/4 cup minced red onion
  • • lime juice from 1 fresh Tropicana® Fresh Lime
  • • salt and pepper

Instructions

  • Toss shrimp in paprika, garlic powder, salt, pepper, and olive oil. Set aside.
  • In a small bowl, mix together diced pineapple, diced tomatoes, diced peppers, minced onions, chopped cilantro, lime juice, salt, and pepper.
  • Add marinated shrimp to a heated skillet sprayed with cooking spray. Cook over medium high heat for about 2 minutes on each side. Shrimp should turn pink.
  • Add cooked shrimp and salsa to the lettuce to create the lettuce wraps.
