High Protein Sweet Potato Toast

Everyone has heard the saying breakfast is the most important meal of the day. But, what if you don't like "breakfast foods"? Try my savory high protein sweet potato toast. This nutritious breakfast is packed with protein, healthy fats, vitamins, and minerals.

  • 1 sweet potato cut into 1/4 inch thick slices
  • 1/2 cup chick peas
  • 1/2 ripe avocado
  • 1 tsp lemon juice
  • Salt pepper, crushed red pepper to taste
  • 2 Tbsp goat or feta cheese
  • 2 Tbsp sliced sun dried tomatoes


  • Slice the sweet potato into 5 1/4 inch slices (you will only use 3 slices)
  • Toast on high heat for 8-12 minutes
  • Mash the chickpeas with a fork and combine with mashed avocado
  • Add lemon juice, salt pepper, and crushed red pepper to the mash
  • Add avocado mash to the sweet potato toast. Top with cheese and sun dried tomatoes
