Blackberry and Rosemary Goat Cheese Bites
Don't have time to put together elegant hors d’oeuvres? Think again! My Blackberry and Rosemary Goat Cheese Bites are simple to make and are sure to wow your guest!
- 1 cup blackberries
- 1/4 cup water
- 1 1/2 tsp corn starch
- 1/4 cup chopped rosemary
- 4-6 oz goat cheese log
- honey drizzle optional
- Brenton Artisanal Sweet Potato and Ancient Grains Crackers
In a small saute pot, combine blackberries and water. Cover and let simmer until the berries begin to breakdown. 4-5 minutes. Mash with a fork or potato masher.
Combine 1 1/2 tsp corn starch and 1 Tbsp of the blackberry juice water. Add the slurry to the blackberries and bring to a boil. Stir often, until the jam is thickened (about 5 minutes).
Transfer the jam to a boil, cover and refrigerate until ready to use.
Roll goat cheese in chopped rosemary, making sure to coat each side.
Place over fresh rosemary sprigs and top with the jam and honey. Enjoy with your favorite crackers.
