Blueberry Chocolate Chip Walnut Cookies

Ingredients

  • 1 cup walnuts
  • 3/4 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 egg
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1/4 cup chocolate chips
  • 1/2 cup blueberries

Instructions

  • Preheat oven to 350 degrees. Grease a cookie sheet.
  • Roast 1 cup of walnuts for 7-10 minutes in the oven. Let cool and coarsely chop.
  • Combine dry ingredients ( whole wheat flour, brown sugar, oats, cinnamon, and baking powder) in a medium sized bowl.
  • In a small bowl combine wet ingredients (egg, canola oil, and vanilla)
  • Add wet ingredients to dry ingredients until fully incorporated. Slowly stir in your chopped walnuts, chocolate chips, and blueberries.
  • Roll into 1 inch balls and place on greased cookie sheet.
  • Should make 12- 14 cookies.
  • Bake for 9-10 minutes or until golden brown. Be careful to not over bake if you like your cookies more chewy like me :)
  • Let cool for a moment (if you can) and enjoy!
