Preheat oven to 400 degrees
Cut sweet potato into 1/4 inch rounds and place in a bowl
Toss sweet potato rounds with olive oil, salt, pepper, cumin, and cayenne pepper
Bake for 20 minutes on the first side. Flip and bake for an additional 15 minutes on the other side
Top each round with cheddar cheese and bake for 5 minutes
While the sweet potato bakes, combine sour cream, honey, and 1 chipotle pepper in a blender
Blend until smooth
Dice avocado and tomato
Top sweet potato rounds with avocado, tomato, chipotle sour cream sauce, and cilantro
