Dice eggplant
Cut grape tomatoes in half
In a skillet heat the EVOO on medium heat
Add eggplant
Toss in the olive oil and let brown
Once the eggplant is a little cooked (about 2 minutes) add the grape tomatoes
Continue cooking for 3 more minutes
Turn down the heat and cook until eggplant has reached desired firmness
Tear basil leaves and sprinkle onto eggplant
Top with shredded Parmesan cheese
