Sauteed Eggplant

  • 1 Small Eggplant
  • 1/4 cup grape tomatoes cut in half
  • 1 tsp salt
  • 1 tsp pepper
  • 2 Basil leaves
  • Parmesan Cheese
  • 1/2 TBSP Extra Virgin Olive Oil EVOO


  • Dice eggplant
  • Cut grape tomatoes in half
  • In a skillet heat the EVOO on medium heat
  • Add eggplant
  • Toss in the olive oil and let brown
  • Once the eggplant is a little cooked (about 2 minutes) add the grape tomatoes
  • Continue cooking for 3 more minutes
  • Turn down the heat and cook until eggplant has reached desired firmness
  • Tear basil leaves and sprinkle onto eggplant
  • Top with shredded Parmesan cheese
  • Enjoy!!
