What You’ll Need to Make It
Ingredients:
Pick your base: Flatbread, naan, tortilla, pizza crust, or pita bread works great! I like opting for a whole wheat version when I can find it for more fiber.
Shredded Chicken: You can use cooked chicken tenders or breasts, or save time by grabbing some rotisserie chicken. Shred it into bite-sized pieces for that perfect texture.
Buffalo Sauce: Buffalo sauce adds that irresistible spicy kick to your flatbread. Choose your favorite and adjust the amount used to match your preferred level of heat.
Prairie Farms Cream Cheese: Elevate your flatbread with the creaminess of Prairie Farms Cream Cheese. This isn’t your average cream cheese; it’s crafted with real milk and cream from local dairy farmers.
Prairie Farms is dedicated to sustainability, animal care, and quality, making their cream cheese truly exceptional!
Shredded Mozzarella Cheese: I used a reduced-fat mozzarella cheese to lighten things up a bit, but feel free to use your favorite melty cheese like cheddar, pepper jack, Colby jack, or a blend.
Mini Bell Peppers: These colorful gems not only provide a burst of vitamin C but also deliver a refreshing crunch to your flatbread!
Ranch Dressing: To balance out the heat of the buffalo sauce, drizzle some ranch dressing over the flatbread before and after baking. If you can find it at your local grocery store, give Prairie Farms Veggie Ranch Dip a try to enhance the creaminess and flavor with a touch of farm-fresh goodness.
Green Onions: Green onions add a mild, fresh onion flavor and a pop of green color to your flatbread. They’re a delightful finishing touch!
How to Make

- Preheat your oven to 400°F (200°C)
- Bring a pot of water to a gentle boil. Add the chicken tenders and simmer for 5-6 minutes or until they reach an internal temperature of 165 degrees Fahrenheit. Remove the chicken from the water, allow it to cool slightly, then shred it using two forks or cut it into small, bite-sized pieces.
- In a mixing bowl, combine the 1 cup of shredded chicken with 2 tablespoons of buffalo sauce. Adjust the sauce amount to your preferred level of spiciness. If you like it extra spicy, feel free to add more sauce or even experiment with hot sauce or Sriracha.
- In a separate bowl, mix the remaining 1 tablespoon of buffalo sauce with 4 oz of cream cheese until well combined.
- Place the flatbread on a baking sheet and spread evenly with the creamy buffalo cream cheese. Top with the buffalo chicken mix, ⅓ cup mozzarella cheese, and mini bell peppers.
- Bake in the preheated oven for 7-9 minutes until heated through and cheese is melted. Option to switch your oven to broil mode and place the flatbread under the broiler for 2-3 minutes. Keep a close eye to prevent burning – it should come out with a beautiful golden hue.
- Drizzle with ranch and sprinkle with green onions, slice, and enjoy!
Variations
Buffalo Chicken Flatbread is a versatile dish that can be customized to suit various tastes and preferences!
Vegetarian Buffalo Flatbread: For a vegetarian option, skip the chicken and use roasted or grilled vegetables like bell peppers, red onions, and zucchini as your main toppings. You can also add some sautéed mushrooms for a “meaty” texture.
Try blue cheese: While the classic recipe uses mozzarella cheese, consider swapping it for crumbled blue cheese or gorgonzola for a sharper and tangier taste. Blue cheese pairs exceptionally well with buffalo chicken.
Breakfast Buffalo Flatbread: Turn it into a breakfast treat by adding scrambled eggs, diced bacon, and a drizzle of hot sauce. Perfect for brunch or a hearty morning meal.
FAQs
What is the difference between flatbread pizza and regular pizza?
The difference between flatbread pizza and regular pizza is the crust. Flatbread pizza typically uses a thinner, flatter, and lighter crust, which can be made from various types of bread, including naan, tortillas, or pita bread.
Regular pizza traditionally features a thicker, yeast-raised dough that results in a chewy and bread-like crust. The toppings and flavors can be similar, but the crust’s thickness and texture set them apart.
Can I use whole wheat or gluten-free pita bread?
Absolutely! You can use whole wheat or gluten-free pita bread as a substitute for regular flatbread in your buffalo chicken flatbread recipe. It’s a great way to cater to dietary preferences or restrictions while maintaining the delicious flavors of the dish.
Is this a healthy buffalo chicken flatbread recipe?
While this recipe might be a little more decadent than others, by using whole wheat pita bread, lean protein, adding plenty of veggies, and sticking to mindful portions, this recipe can certainly be enjoyed as a part of a healthy balanced diet.

How to Store and Reheat (or Make Ahead)
Storage Instructions
Store leftover buffalo chicken flatbread pizza in an airtight container in the refrigerator for 3-4 days.
How to Reheat
To reheat, preheat your oven to around 325°F. Place the flatbread on a baking sheet and warm it for about 10 minutes or until it’s heated through. Alternatively, you can use a toaster oven or microwave, but the oven method will help maintain the crispiness of the crust.
If you have separate toppings (like fresh greens or avocado slices), store them separately in airtight containers to maintain their freshness. Add them to the flatbread just before serving to ensure they remain crisp and vibrant.
How to Make Ahead
Assemble the flatbread entirely, including the toppings, but don’t bake it. Cover and refrigerate. When you’re ready to serve, pop it in the preheated oven and bake as directed in the original recipe.
Can you freeze buffalo chicken flatbreads?
Yes, you can freeze this flatbread for 2-3 months. Allow the buffalo chicken flatbread to cool completely to room temperature before freezing. Wrap the flatbread tightly in several layers of plastic wrap to create an airtight seal. Place it in a freezer-safe resealable bag or airtight container and freeze.
Reheating Frozen Buffalo Chicken Flatbreads
For the best results, thaw the frozen flatbread in the refrigerator overnight. This gradual thawing helps preserve the texture during reheating. Preheat your oven to 350°F (175°C). Unwrap the flatbread and place it on a baking sheet.
Bake the flatbread for about 15 minutes or until it’s heated through. Check it periodically to ensure it doesn’t overcook or become too crispy.
How to Serve
Slice the flatbread into wedges or squares to share as an appetizer or as a quick and satisfying meal. Pair it with a side salad or some crispy carrot and celery sticks for a well-rounded meal.
