As the back-to-school and work season approaches, busy mornings can leave both parents and kids struggling to put together a balanced and nutritious meal to take along. But fear not! My Vegetarian Spicy Noodle Spring Rolls are fun to make as a family and enjoy for dinner. Then they’re great to add to Bento Boxes for lunch the next day!
What You’ll Need to Make The Best Spicy Noodle Spring Rolls

The star ingredient is the Craft House Collection® Aurora Long Sweet Peppers. Their long shape, crunchy texture, and sweet flavor make them perfect for this fresh recipe! Plus, they’re packed with vitamin C– great for immunity during this back-to-school season.
Ingredients:
- 8-10 rice paper rolls
- 1 can of bean sprouts, drained and rinsed
- 1 pack of Craft House Collection® Aurora Long Sweet Peppers, julienned
- ½ English cucumber, julienned
- 2 cups Asian slaw mix
- 2 cups shelled edamame
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sriracha
- 1 tbsp toasted sesame oil
- 2 tsp rice vinegar
- ½ tsp garlic, minced
- Store Bought Sweet Chili Sauce
How to Make Spicy Noodle Spring Rolls
- Whisk together soy sauce, honey, sriracha, toasted sesame oil, rice vinegar, and garlic in a medium-sized bowl. Add the bean sprouts and edamame and toss to combine.

- Add 1 inch of water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your plate.

- Layer 2-3 slices of each veggie, the noodle mixture, and the Asian slaw mix in each spring roll. Be careful not to overfill and leave extra room around the sides.






- Fold the left and right sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, tightly sealing everything together. Then roll it up, like a burrito.



- Repeat with the remaining wrappers and filling ingredients to assemble the rest of the rolls.
- Serve with store-bought sweet chili sauce for dipping.

Variations
Feel free to use any noodles that you’d like for this recipe. I used bean sprouts to keep things light, but soba noodles, rice noodles, ramen noodles, or even spaghetti noodles would work great too.
You can also change up the veggies, add fresh herbs, or add additional protein like cooked shrimp, chicken, or tofu.
How to Serve
I like to keep it simple and serve mine with a store-bought sweet chili sauce. But you could also make your own spicy noodle spring roll sauce with soy sauce, peanut butter, sesame oil, a dash of sriracha, and a little water to thin.
How to Store and Reheat (or Make Ahead)
If you’re not enjoying the spring rolls right away, wrap each roll individually in a damp paper towel and store for 2-3 days in the fridge.
Don’t skip this step. The rice paper will dry out, and if you store them next to each other, they will stick together.
