This month’s recipe redux theme is plant protein power bowls. Plant based everything has been all the rage recently and I’m happy to jump aboard. I love meat, but it is important to eat a variety of foods to meet your nutrient needs. Plant proteins are found in beans/ legumes, lentils, nuts, seeds, soy, and some grains- think quinoa or sorghum. Plants proteins are great to incorporate into your diet because they are very low in fat, but high in protein and fiber. This is especially beneficial for people who are trying to watch their cholesterol or need to reduce their fat consumption.
To be honest, I hated beans for the longest time. Absolutely hated them! I didn’t like their mushy texture and bland taste. I have been trying to be more open to foods, so slowly but surely I started incorporating beans into my diet. First in a dip, then in a quesadilla, then in a southwestern stir fry and finally to just enjoying them atop my salad.
I found that if you pair them with delicious foods and rinse the gross gook off of them, they aren’t so bad! This salad is one of my favorites just because it is so simple to make. Some nights you just don’t feel like cooking or doing dishes. This is the dinner for those nights. Double or triple the recipe and have it for lunch the next day. If you want to get really fancy and feel like cooking- saute the veggies (minus the lettuce) first and then top your salad with them. I like it both ways, but when I’m in a hurry, this simple salad is a winner!

Southwestern Chopped Salad with Honey Lime Dressing
Ingredients
- 4 cups romaine lettuce chopped
- 1/2 cup no added salt black beans rinsed
- 1/2 cup no added salt corn rinsed
- 1/2 orange bell pepper chopped
- 1/2 orange bell pepper chopped
- 1/4 cup red onion diced
- Dressing:
- 2 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 1 Tbsp Honey
- 1/4 tsp minced garlic
Instructions
- Toss salad ingredients together and set aside.
- In a small bowl, whisk together dressing ingredients.
- Toss salad in dressing and sprinkle with salt and pepper to taste.
