This sauteed eggplant is the perfect side dish to any meal. It’s easy to make and doesn’t need a lot of ingredients! PTL! Try some tonight!
Sauteed Eggplant
Ingredients
- 1 Small Eggplant
- 1/4 cup grape tomatoes cut in half
- 1 tsp salt
- 1 tsp pepper
- 2 Basil leaves
- Parmesan Cheese
- 1/2 TBSP Extra Virgin Olive Oil EVOO
Instructions
- Dice eggplant
- Cut grape tomatoes in half
- In a skillet heat the EVOO on medium heat
- Add eggplant
- Toss in the olive oil and let brown
- Once the eggplant is a little cooked (about 2 minutes) add the grape tomatoes
- Continue cooking for 3 more minutes
- Turn down the heat and cook until eggplant has reached desired firmness
- Tear basil leaves and sprinkle onto eggplant
- Top with shredded Parmesan cheese
